Ingredients5 pounds pork cushion meat3/4 cup brown sugar3/4 cup salt1/4 cup ground cuminApple juice Orange-Chipotle BBQ Sauce (recipe follows)Apple-Cabbage Slaw (recipe follows)Spicy Onions Rings (optional)Cheddar cheese
Method1. Drain pork and pat dry.2. Combine brown sugar, salt, and cumin.3. Coat meat evenly with mixture and let rest overnight. 4. Place meat in braising pan, cover with apple juice.5. Bring liquid to a strong simmer, cover tightly.6. Place in 250 degree oven, and braise for 5 hours.7. Remove liquid and allow to cool (save liquid )8. Shred pork using forks to pull meat apart.
Apple-Cabbage Slaw
Ingredients2 pounds sliced cabbage, carrot and purple cabbage 1/4 cup gold raisins2 cups Red Delicious apples, julienne cut Coleslaw Dressing (combine 1¼ cups mayonnaise, ¼ cup apple cider vinegar, and ¼ cup honey)
MethodCombine all ingredients, season with salt and pepper. Place in a perforated pan and allow to sit overnight. Orange-Chipotle BBQ Sauce
Ingredients1 cup ketchup1 tablespoon mustard3 tablespoon Worcestershire sauce2 tablespoon apple cider vinegar3 tablespoon brown sugar 1 cup orange juice ¼ cup Chipotle puree
MethodCombine all ingredients, season to taste.
To Serve1. Gently heat pulled pork in BBQ Sauce. 2. Place pork on a toasted roll, top with cheddar, melt under broiler 3. Serve with, Apple Cabbage Slaw, lettuce, tomato, pickle, and Fried Onion Rings, if desired.
