Anthony Aviles, General Manager

Sarasota native, Anthony Aviles, has been entrenched in the hospitality industry from a young age first getting his start in working numerous positions in the five-star restaurant at The Colony Beach and Tennis Resort.  Upon graduating from The University of South Florida - Sarasota/Manatee with a degree in Hospitality Management, Anthony continued to define his career path in the industry at The Resort at Longboat Key Club, holding general manager positions at nearly all of the restaurants on property, before taking on the role of Assistant Food & Beverage Director at The Lido Beach Resort.  In his position at Jack Dusty as General Manager, Anthony looks to bring the level of service well-known to those who frequent the restaurant while working to build impactful relationships with local organizations, and striving to continuously innovate and wow guests after each visit.  If guests ask Anthony what his favorite dish at Jack Dusty is, he is sure to say the 1855 New York Strip, paired with Muga Rioja while overlooking the marina as the sun goes down over Sarasota.

Jay Norris, Chef de Cuisine

With over a decade of experience in international kitchens, Chef Jay Norris uses his global experience to create a menu that incorporates the freshest local ingredients to craft dishes that combine a harmony of unique flavors in each bite. Norris began his career in a fish market, and is an expert in all things seafood, from selecting the best fish to how to season the catch to perfection.

Chef Norris sharpened his culinary skills in kitchens from Hawaii at the four-star Casa Donaldo to Australia at the Opal Cove Resort. He also held the Chef de Partie position at The Spencer on Byron Hotel in New Zealand and was the Sous Chef at the Swedish Embassy in Buenos Aires. Most recently, Norris ran the food and beverage program at the Wind Creek Casino & Hotel in Almore, Alabama prior to joining the Jack Dusty crew.

Chef Norris offers Jack Dusty guests the opportunity to explore international flavors that seamlessly complement the unique story of each dish. Norris is also a Certified Sommelier; who provides Jack Dusty guests with wine pairing options with each course.

Candice Marie, Lead Bartender

Hailing from Ohio, Candice Marie took an untraditional approach to becoming the Lead Bartender at Jack Dusty. While successfully achieving a degree in Marketing and Advertising, Marie supported herself throughout college as a bartender. Living in Dallas, Texas after college, Marie returned to school in pursuit of a Masters in Architecture. Her passion for the hospitality industry and craft of the bartender flourished during her time as the Director of Marketing for a major hospitality group and entertainment venue in Dallas. Marie also worked as a team leader and brand ambassador for this hospitality group, which is one of the highest rated restaurant groups in the destination that has been recognized for several awards on a national level for their innovation in breaking the mold of the food and beverage model as we know it.

With an understanding that her true creative passion and design was the art of the cocktail and the hospitality industry, Marie immersed herself in the resurgence and mastery of the craft by working alongside magnetic names such as David Alan and Feargal McKinney in the beginning of her career to Chad Soloman and Christy Pope; formerly of Milk and Honey and co- owners of The Midnight Rambler and with the late Sasha Petraske of Cuffs and Buttons Consulting.

Marie will lead the beverage program at Jack Dusty to new innovative levels. Guests will experience unique cocktails combining the freshest ingredients, crafted with passion and soul; each cocktail comes with a story created by Candice and her team.

Clay Kearney, Community Liaison & Events Coordinator

A Sarasota native, Clay Kearney has strong ties with The Ritz-Carlton, Sarasota where he first worked at the property in 2007. Most recently, Kearney proposed to his fiancé at the Jack Dusty overlooking Sarasota Bay. Prior to his current role at Jack Dusty and returning to The Ritz-Carlton, Sarasota, Clay held positions at The Cottage on Siesta Key and Tableside Restaurant Group. Clay has joined Jack Dusty as the new Community Liaison & Events Coordinator where he will partner with local charities and companies to further education and sustainability within the restaurant and create memorable moments for each guest.  In his spare time, Clay volunteers for Big Brothers & Sisters where he is currently a role model for a little brother within the program.
