Anthony Aviles, General Manager

Sarasota native, Anthony Aviles, has been entrenched in the hospitality industry from a young age first getting his start in working numerous positions in the five-star restaurant at The Colony Beach and Tennis Resort.  Upon graduating from The University of South Florida - Sarasota/Manatee with a degree in Hospitality Management, Anthony continued to define his career path in the industry at The Resort at Longboat Key Club, holding general manager positions at nearly all of the restaurants on property, before taking on the role of Assistant Food & Beverage Director at The Lido Beach Resort.  In his position at Jack Dusty as General Manager, Anthony looks to bring the level of service well-known to those who frequent the restaurant while working to build impactful relationships with local organizations, and striving to continuously innovate and wow guests after each visit.  If guests ask Anthony what his favorite dish at Jack Dusty is, he is sure to say the 1855 New York Strip, paired with Muga Rioja while overlooking the marina as the sun goes down over Sarasota.

John Ford, Chef de Cuisine

With over a decade of experience in kitchens along the East Coast, Chef John Ford’s passion and expertise will evolve the menu at Jack Dusty to offer innovative dishes with an emphasis on local seasonal ingredients. 

A humble introduction to the culinary world, it wasn’t until high school after enrolling in a culinary arts course by chance that Chef John discovered his love for food. He was introduced to new flavors and cuisines that he had never experienced before and was inspired to become a Chef. From there his passion for cooking blossomed as he attended Johnson & Wales in Miami for culinary arts while simultaneously working in the kitchens of Loews Hotel Miami Beach.

Throughout the years, Chef John has held numerous positions at the iconic Fontainebleau Miami Beach, starting as a Sous Chef and working his way to Senior Banquet Chef during his four years at the hotel. During the off-season, John sharpened his skills in New York at establishments such as Gilt, Aureole, Scarpetta and Union Square Café. Prior to his current role at Jack Dusty, Chef John served as the Executive Sous Chef of Stripsteak by Michael Mina.

Chef John is dedicated to providing a whimsical dining experience that showcases quality ingredients at their peak. With Chef John at the helm, Jack Dusty will become a place not only revered for its food, but a relaxed and fun environment for guests to create memories.

Kelly Crawford – Lead Bartender, Jack Dusty

With over a decade of experience in the hospitality industry, Sarasota native Kelly Crawford brings a vast knowledge of the business to the bar of Jack Dusty as Lead Bartender of the coastal dining destination.

Having held both service and management positions within the industry, Crawford brings a fresh perspective and well-rounded understanding of the restaurant business as a whole to the role, in addition to creating inventive craft cocktails.  Prior to his current position, Crawford served as general manager of several local Sarasota establishments, founded a promotion and event planning company, and sold liquor for the likes of Jack Daniels and Grey Goose – all while honing his skills in cocktail creation.

As Lead Bartender of Jack Dusty, Kelly plans to bring the bar back to the basics and revamp the culture behind the bar -- incorporating more rum-centric, inventive, and cutting-edge cocktails and further bringing the bar back to the basics that pay homage to the Jack Dusty story.   With Crawford at the helm, guests can explore new seasonal cocktail menus, infused liquors, and tableside creations debuting throughout the year, while still enjoying some of Jack Dusty’s classics such as the Siren and Smoking Jacket.

Kristen Mathe, Events Coordinator and Community Liaison

Originally from Baltimore, Maryland, Kristen transitioned to Florida in 2009 to study Art at The University of Tampa.  Shortly after graduating, she relocated to Sarasota for a position at Ringling College of Art and Design. During this time, she became more involved in the Sarasota food scene while holding a position at Indigenous. In 2016 she joined The Ritz-Carlton, Sarasota as the Administrative Assistant to Meetings and Special Events, where she assisted in the daily operation of the department and the coordination of banquet events. When the opportunity arose to combine her interests in event coordinating and marketing, she jumped on the chance and joined the Jack Dusty team. Kristen looks forward to creating memorable and unique events at Jack Dusty, while continuing to grow Jack’s presence in the community.
