In celebration of the resort’s 2022 Forbes 5-Star achievement, guests can order the new Star Sunset cocktail available at The Conservatory, the cocktail is available for $50 and includes Dom Perignon champagne, Macallan 18 scotch, Campari, local lavender honey syrup made in-house, and apple. At Navio, the Mint Chocolate Stone dessert will be added to the Chef’s Tasting Menu and Three Course menu. The decadent dessert includes Valrhona chocolate mousse, cocoa gelée, mint ice cream, and edible gold flakes.

GLOBAL CUISINE SERIES AT NAVIO WITH CHEF FREDDY MONEY OF ATLAS

July 22–24, 2022 

Our Global Cuisine Series kicks off with a star chef collaboration by Chef Francisco Simón and Chef Freddy Money of Atlas on the seven-course Chef’s Tasting dinner menu (July 22–23) and the two-hour brunch experience (July 23–24) at Navio. Featuring artfully presented coastal cuisine, both experiences will present several dishes by Chef Money focused on his philosophy of storytelling cuisine and takes guests on a journey that focuses on ingredients, provenance and texture resulting in a powerful combination of wonderful and memorable food. Having trained in some of the best culinary environments in Europe, Chef Freddy currently shares his time with Tavistock Group and its restaurant portfolios. He was recently appointed Culinary Director for Atlas and The Garden Room within The St Regis Atlanta.

GLOBAL CUISINE SERIES AT NAVIO CHEF MATTHEW NEELE OF WALLSE

September 9–11, 2022  

The Global Cuisine Series continues as Chef de Cuisine Francisco Simón collaborates with Chef Matthew Neele of Michelin-starred Wallse to present a seven-course Chef’s Tasting dinner menu (September 9–10) and the two-hour brunch experience (September 10–11) at Navio. For over two decades Wallse, located in New York City, has been serving authentic Viennese classics with a contemporary flair, Chef Neele will present several of the Austrian restaurant recipes on the seven-course dinner menu. His culinary background includes working at world-renowned restaurants including Noma, Eleven Madison Park, and Corton. Chef Neele also runs his own food, art and restaurant consultancy, Ôrkid.

GLOBAL CUISINE SERIES AT NAVIO WITH CHEF NOAH SANDOVAL OF ORIOLE

November 11–13, 2022

The Global Cuisine Series continues as Navio welcomes guest Chef Noah Sandoval of two Michelin-starred Oriole of Chicago, to present a seven-course Chef’s Tasting dinner menu (November 11 –12) and a two-hour brunch experience (November 12–13) highlighting several of Oriole’s contemporary American dishes. Oriole has received a four-star rating from the Chicago Tribune and Chicago Magazine, and two Michelin stars every year since 2016. In 2022, Oriole was named Restaurant of the Year from the Jean Banchet Awards. Chef Noah Sandoval is also a James Beard Award-nominated chef and was named a Food & Wine’s Best New Chefs in 2017.
