April 20 - 23, 2023

The 2023 Global Cuisine Series continues as Navio welcomes guest Chef Rachel Haggstrom of Michelin-starred and Michelin Green-starred The Restaurant at JUSTIN Vineyard & Winery. Complemented with pairings from JUSTIN’s award-winning wines and sweeping views of the vineyard, The Restaurant at JUSTIN brings a one-of-a-kind, dinner experience to the wine country of Paso Robles. In 2022, The Restaurant received a coveted Michelin Green Star for its sustainability practices; currently, 95% of the ingredients on the seasonal rotating menu are sourced locally from either their 26-acre garden or local purveyors and farmers throughout the Central Coast. Navio Chef de Cuisine Francisco Simón will collaborate with Haggstrom to present a seven-course Chef’s Tasting dinner menu (April 20 - 22) and a two-hour brunch experience (April 22 - 23). April 1 – May 22, 2023

Each spring, lavender finds itself in full bloom in Half Moon Bay. To embrace the beauty of the spring super bloom, our resort has created lavender-inspired menus and curated cocktails to delight the senses. Navio will feature the Lavender Bloom white rum cocktail complete with lavender simple syrup, lemon, edible butterfly pea flowers and a lavender sugar rim. At The Conservatory, guests can sip on the Lady Violet cocktail, a concoction of locally-made Half Moon Bay Lavender Vodka, yuzu, chamomile lavender syrup, and a splash of champagne topped with edible flowers.

Navio’s dessert menu will include the Black Sesame dessert, a sweet and savory dish complete with notes of blueberry, lavender, goat cheese and a drizzle of honey. The Conservatory will feature the Black & Blueberry Crisp dessert, an idyllic finale with a vanilla crumble and honey lavender ice cream.
