Setsubun and the coming of Early Spring

Setsubun, the Bean-Throwing Ceremony, celebrated yearly on the 3rd of February, is a part of the Spring Festival – Hanamatsuri. Setsubun has its origins in tsuina, a Chinese custom introduced to Japan in the eighth century. As the tradition goes Special Dishes for Setsubun will be prepared by our Culinary Team to take back in time to the Japanese tradition. Ginger sake - Shōgazake is also customarily drunk at Setsubun. Hinokizaka will feature this popular dish in its beverage selection.

Following this ancient tradition we will take you further in the Early Spring where seasonal ingredients such as Braised Bamboo Shoot, Ice Fish, Sardines, Soy Beans and Prawns will remind everyone the changing of seasons.

Shodo Island located in the Inland Sea is famous for being the first in Japan to successfully cultivate olives. As olive trees flourish on the island, the cattle is usually fed with olives. Due to this unique characteristic the meat is very delicate, low in fat content and has a high nutritional value.

Seasonal Tilefish will also be featured on Chef Yoshida’s menus throughout the month.

Hinamatsuri, the Japanese Doll's Festival is held on the 3rd of March. This is a day to pray for young girl's growth and happiness. As tradition goes there are many dishes served during this festival: Shirozake, a sake made from fermented rice; Hishimochi, a diamond-shaped colored rice cake; Chirashizushi, sushi rice flavored with sugar, vinegar, topped with raw fish and a variety of other ingredients.

Chef’s Kaiseki menu made to celebrate the coming of spring will feature dishes created especially to entice guests in trying delicacies anticipating the long-awaited Cherry Blossom week: Sakura Sea Bream, Wild Seaweed and Steamed Shellfish.

Ezo Abalone from North Sea is a delicacy during this season. Our menu highlight is the Ezo Abalone wrapped in Seaweed with Lemon and White Wine flavor.

Chef features this month the exceptional Premium Ishigaki Beef from Kitauchi Farm in Ishigaki Island. While a regular cattle is normally raised in a farm around twenty-eight month, the Ishigaki Beef is particularly raised for forty months. With its very rich taste the Ishigaki Beef is simply the best of Okinawa!

Aji – the Japanese Horse Mackerel is one of the all time most popular Japanese whole fish which has a deliciously oily flesh rich in Omega-3. Coming from Sagami Bay and Izu Shichito Islands it has lots of nutritients during this season.

Firefly Squid from Uozu or Shinminato in Toyama Bay is only 3 inches long, but has a stunning feature: at the end of their tentacles are special organs called photophores that light up like glow sticks.

Chef recommends that his delights may be paired with Sake or Shochu.
