Assistant Director of Food and Beverage

Jessica’s 9-year career spans the restaurants of various international luxury hotels in Singapore and Hong Kong. She oversees the Colony restaurant operations team and is always looking for ways to elevate our diners’ experience and grooming the team under her care. 

Jessica graduated from the Hong Kong College of Technology (HKCT) with a degree in International Tourism Management and is fluent in English, Mandarin and Cantonese. In her spare time, she unwinds by indulging in blockbuster movies or planning for her next travel destination. Her personal travel dream is to visit Finland to catch the Northern Lights.

Kelly Tay, Chef de Cuisine

Kelly has over 15 years of hospitality experience under his repertoire and leads the Colony culinary team. He realised his passion for the culinary arts at the age of 16 after observing chefs while he was working at a hotel. Impressed by their skills, creativity and meticulous plating, Kelly decided to carve out his career as a chef and quickly enrolled into The Singapore Hotel and Tourism Education Centre (SHATEC) upon graduating secondary school.

Over the years, Kelly has worked for various specialty restaurants and hotels where he continuously hones his culinary skills and has become exceptionally well-versed in Modern European cuisine.

When he is not in the kitchen, Kelly enjoys jogging, swimming, fishing and the occasional Muay Thai session.
