The one Michelin star Summer Pavilion is delighted to present a Telmont Champagne Pairing Set Dinner Menu featuring the Telmont Réserve Brut NV; the Telmont Réserve Rosé; and the Telmont Blanc de Blancs, Vinothèque 2005, paired with contemporary Cantonese cuisine such as Pan-fried Japanese Waygu Beef with Braised Beef Brisket; and Steamed Glutinous Rice with Australian Greenlip Abalone.

The House of Telmont was founded in 1912 by Henri Lhôpital, and has over a century, produced exceptional champagnes from their ancestral vines in the village of Damery, near Epernay. Its four generations of winegrowers possess a strong commitment to their terroir and grapes, and have transitioned towards organic and sustainable agriculture within their vineyards. The house enables the terroir to express itself through their champagnes, and the result is champagnes with a unique personality, complexity and maturity, and remarkable ethereality.
