Originally from Brazil, Chef Rafael Fernandes Gil studied business management in preparation for taking over the family business. He then realized his true passion, cooking, and started his culinary training in 2006. Being profoundly gifted and passionate, it did not take long for him to get into world-class Michelin-rated restaurants including three-starred Martin Berasategui restaurant in San Sebastián and one-starred EVO restaurant in Barcelona. In 2013, he set foot in Asia to open Catalunya in Singapore. Chef Rafael joined Ozone at The Ritz-Carlton, Hong Kong in 2015 to bring new energy into the highest bar in the world with his vibrant selection of avant-garde Spanish tapas.

Our dynamic restaurant manager is a South African-born Belgian fluent in six foreign languages. He has worked actively in the food and beverage industry at various Marriott properties across Asia, including Shanghai, Bali and Jakarta.

SUSHISAMBA originated in New York and spread to Miami, Las Vegas and London, and is now in Hong Kong, taking guests at Ozone on a unique journey of Asian and Latin American fusion cuisine.
Available for a limited time only, this special menu combines bold Brazilian flavors, precise Japanese techniques and exquisite Peruvian culinary traditions on one plate, specially crafted by SUSHISAMBA London Executive Chef Cláudio Cardoso and SUSHISAMBA Regional Corporate Sushi Chef John Um and paired with symphony cocktails from Ozone.

Located on 118/F at 490 meters above sea level, the Veuve Clicquot Sunset Lounge is one of the best places in the city to catch the sunset.
