Chef de Cuisine Paul Lau Presents Mantis Shrimp Tasting Menu

Mantis shrimp, renowned as the “heavyweight of the sea”, its punch is the fastest of the whole animal kingdom. This spring, two Michelin-starred Tin Lung Heen Chef de Cuisine Paul Lau has created a menu in homage to the Mantis Shrimp with a special menu that packs a punch.

The special tasting menu features two Mantis Shrimp courses in different cooking styles. For the grand finale, the sweetened rose tea with glutinous rice dumplings will be served. To enhance the whole dining experience, sommelier Benson Yan has selected exceptional wines to pair with this sumptuous menu.
