Born in Puglia, Chef Lavarra has a wealth of experience working in renowned hotels and restaurants around the globe, shaping his gastronomic technique to the pinnacle. His gastronomic talents has earned him prestigious recognitions including “One of the Best Chefs in the World” by the American Academy of Hospitality Sciences, and Michelin two stars award for Rossellinis, the restaurant that he led since 2001, a one-star rating for three consecutive years since 2013 at Tosca in Hong Kong.

His culinary style features a mix of innovation and tradition, presenting the classical innovative Italian cuisine in a contemporary way, creating and crafting a gastronomic memory that will last a lifetime.
